soooooo sleepy

Another grey old monday made sleeping in seem ever-so-attractive. But instead, I climbed on out, had breakfast, dropped the gal at school - and came home to make her lunch to drop off before 11am {whoopsies = no food in house!}

So now, chorizo and potato frittatas are bubbling away in the oven and I'm preparing to write up my menu plan and shop for the week. Any ideas...

  1. I threw together a lasagna late on Friday night and baked it yesterday. We had it for dinner last night and tonight, and Nolan will be taking the last of it for lunch tomorrow!

    I'll be making split pea soup tomorrow, it'll be our dinner tomorrow night and lunch for me for a few days.

    Oh last week I also made a huge pot of black beans and we ate off of those for three days in various incarnations (with chips and cheese for Nolan, poached egg and salsa for me).

    Some Sundays I make a pan of enchiladas because Nolan looooooves the leftovers for his lunches. I may make blue cheese meatloaf this week too, depending on kinds of meats are on sale.

    I have a really hard time finding chicken recipes that can be reused or reheated well.

  2. For our veggies lately, snack veg's have been celery and carrots (uber cheap right now). Lunch and dinner vegs have been broccoli, brussels sprouts, asparagus, and sweet potatoes (all the cheapest and freshest right now).

    I use lots and lots of dried beans in my cooking. We probably eat beans 2 or 3 times a week- it's totally budget and waistline friendly!

  3. You are just amazing. I love the thought you put into your meals - they all sound delicious and nutritious! I made split pea and bacon hock soup for lunch on saturday - yummy. It was my mother-in-law's birthday and they came over for a light meal at midday. For afters, I made a rhubarb and yoghurt cake which was topped with a sliced almond, brown sugar and cinnamon mix. YUM!
