meal planning monday


Meal-planning last week flew right out the window. I didn't go shopping and had lots of unexpected last minute plans so hubby and I had toast for dinner one night {we had some ravioli for the gal} and one night I even, {come close, I'll be whispering this... *Ihadacheeseburgerfrommcdonaldsdon'thateme*}

So some of last week's meals will be repeated - as they weren't even cooked. But I did come up with a surprise last night. We had some leftover roast butternut pumpkin in the fridge, so I tipped it into a bowl, added some cooked leftover jasmine rise, a sliced green onion and some frozen corn, sweet chilli sauce and dried, mixed herbs and formed it into little balls. I then baked these in the oven and served it with the fillet steak with balsamic caramelised onion and salad for dinner. Delish! Great for hiding vegies for kidlets too - you could add peas, grated carrot, grated {drained} zucchini - anything!

Monday: I'm doing crusted lamb fillet with roasted chick pea salad {I'll roast vegies such as capscium, zucchini and onion, and then, with 15 minutes to go, I'll toss in some drained and rinsed tinned chickpeas and garlic and let them all brown up. I'll serve with a balsamic glaze and sprinkled with parsley}

Tuesday: Pork schnitzel, mash and greens.

Wednesday: It's my gal's netball presentation from 6.30 and I'll be there early setting up. She'll have a sausage sizzle, I'll see if I can snaffle one too. Hubby can fend for himself.

Thursday: Salmon patties with apple coleslaw.

Friday: I'm going to do a butterflied chicken on the bbq. With a haloumi and beetroot salad.

Saturday: I've got a hankering for scallops - dare I try to cook them?

Sunday: Roast with a twist - leg of lamb on the bbq with a french lentil salad.

what's cooking wednesday

You know what? I'm pretty sure that the one thing that keeps me sane is menu planning. Sure, I don't always follow it to the letter, but it stops the panicked "Oh my god, what are we going to have for dinner?" at 5pm. Here's what we'll be eating this week.
Wednesday: My gal has a netball clinic and shall be starvational upon return. I'm going to cook up a beef and cashew stir-fry with lots of noodles.
Thursday: My pal, the Divine Ms M, is up for the night. Best cook up something good. Provencal chicken always goes down a treat.
Friday: Off to my in-laws for dinner. My mother-in-law always cooks up something yummy.
Saturday: We're going to friends' for 'duck night'. They'll be cooking up duck confit, we'll be bringing matching champagne and a pudding. We do it french-style and buy something from a good patisserie.
Sunday: There shall be roast and it should be pork.
Monday: Lamb backstrap warm salad - with feta, mint, peas and a caramelised balsamic dressing.
Tuesday: French lessons {with the scariest task ever - and one we're getting marked on - sacré bleu!} Chicken curry in the slow cooker is the best option.

And that's it. Two cheaty meals out and lots of fun.

what's cooking wednesday

Phew, back in the real world - at last. No more school holidays!! So it's back to normal cooking - and a new routine to account for after-school activities. Here goes:
Tonight: Last night we had a simple steak and salad, so tonight I might just cook up some salmon and salad on the bbq - I'm presuming this hot weather's continuing...
Thursday: Oh yes, I've done it again - invited friends for a mid-week dinner. The two couples {with kids} are bringing pre-dinner nibbles and dessert so I only have to worry about the main. I'll cook up an enormous pork belly and serve it with an apple, oak leaf lettuce and walnut salad, a lemon potato salad and lots of baguettes.
Friday: I'm in Sydney all day leaving hubby and daughter to cook. I think they'll whip up some Mexican. Perhaps chicken burritos - easy to heat when I come home.
Saturday: I'm off to a 40th - all 80s inspired. We're meant to frock up in 80s garb so I'm channelling early Madonna. Oh yes I am.
Sunday: Roast chicken, some roasted veg and salad sounds like a cleansing option.
Monday: Salmon patties and salad.
Tuesday: our new big day. The gal has ballet till 5.30 and I've got French Lessons starting at 6pm - so our paths shall barely cross. It's a slow-cooker or a "here's something I've prepared earlier" kinda night. Chorizo pasta bake perhaps...

what's cookin' this week?

We're getting back into entertaining this week - hurrah! So here's what we'll be eating this week.
Tonight: the gal's off to her grandparents' for a couple of nights so we'll have a simple steak and salad dinner.
Wednesday: still no child - I think I might try a pork stir-fry.
Thursday: Child being returned by grandparents - who I'll repay by cooking up a meal. I'm going to try chicken with 40 cloves of garlic, potatoes and green beans.
Friday: two couples and assorted kidlets for dinner tonight. We're going to Provence this year with one of the couples so I'd best check out my Provence cookbook to find a suitable meal. For pudding I'll be making my new fave - nectarine clafoutis and vanilla bean icecream.
Saturday: Thai beef salad.
Sunday: The farmer's markets re-open - hurrah! I'll be buying something yummy and cooking it up.
Monday: lamb on the bbq I think.

PS: I adore this pop of colour and use of a screen door on the pantry. I'm tempted to take the screen door off our side veranda, paint it and pop it on our pantry. Unfortunately I've hidden away our fridge, recycling bin and rubbish bin in our pantry so it's not quite as peep-worthy as this one...

how many sleeps?

How are you going with the Christmas craziness? Today's our last day of school, and last night we had the school christmas concert {which was just adorable}. I think I'm all prepared for my gal's birthday party Friday night. I've ordered the Sushi platter, I'm going to buy in some honey soy chicken wings {Christmas is nothing if not a time to be realistic}, and we've bought the gift bags, complete with rainbow coloured nailpolishes. Thursday night will be cooking night when we'll bake the rainbow cake {yes, I'll post pics} and make the pesto and cheese and the pizza pinwheels.

what's cooking wednesday

Okay, it's that time again. What we're eating this week. This time it's going to be a little different than usual. I called my doctor today to finally ask after the results of the ultrasound. As expected I have one enormous gallstone. Just the one. He told me to avoid tomatoes, cucumber and onions. ONIONS. People, how am I to cook without onions? And salad without cucumber and tomato - oh, you know I'm crappy with salads - this is going to really force me to spread my wings... Also, my mum and step-dad are with us for a week which means vegetarian meals are on the menu - and hopefully my step-dad will be doing a lot of that cooking!
Wednesday: it's the night of the ballet concert. Hurrah. It finishes at 8pm so we're all coming back here for dinner. Think I'll have a salad ready and pizzas ready to go into the oven.
Thursday: My last French class of the year - everyone can fend for themselves, I'll be nibbling on a wee spot of French goodies I'll imagine.
Friday: There's a Twilight gathering down the road - with latin dancing, and other festivities. Best have an early BBQ and go check it out.
Saturday: Hubby and I are off to Sydney for a friend's 30th. Bless. I think I'll send my parents and my gal out to the Red Lantern Twilight Markets.
Sunday: My gal's performing in a choir at a local church service. Hello picnic dinner.
Monday: Um, my gal's school Christmas Concert. Yep, picnic dinner again.
Tuesday: Parent's last night - some kind of vegetarian feast is called for.
